Recipe – Cinnamon sugar stamped biscuits

I first made these biscuits when I was trying to find something cinnamon to go in one of my foodie penpals parcels. They are totally coated in cinnamon sugar yet it isn’t too overpowering – they are very moreish!

Ingredients (makes approx. 30)

Biscuits

  • 200 g butter
  • 200 g caster sugar
  • 1 tsp vanilla (optional)
  • 1 egg
  • 425 g plain flour

Cinnamon sugar 
(You will find that this makes more than you need but you can save it for future. You can also add more/less sugar/cinnamon to your taste)
  • 1 cup granulated sugar
  • 1/2 cup ground cinnamon

Equipment

  • biscuit stamps (I got mine from a discount supermarket but you can get them from Amazon/eBay)
  • baking tray
  • baking paper

Method
  • Preheat oven to gas mark 6 / 200C / 400F
  • Cream together the butter & sugar (I did it by hand)
  • Add the egg and beat well until combined. If you are using vanilla add this also. I find that these biscuits taste lovely without though
  • Add the flour and work to a dough
  • For the cinnamon sugar – mix the sugar & cinnamon until well combined
  • Line a baking tray with baking paper and from the ball of dough, taking a palm sized piece at a time, roll into a ball and then roll in the cinnamon sugar
  • Place each ball on the tray and pat down slightly (they don’t need to be too far apart as this dough doesn’t really spread)
  • Stamp each biscuit pressing until flat (you may find you need to press a little hard to get the full imprint)
  • Bake for 8 minutes, until lightly brown around the edges
  • Leave to cool for 5 minutes then remove onto a cooling rack
  • Enjoy!
